Sourdough: Not just tastes better but is better for you!

At Paolo’s Pizza Bar we use only Lievito Madre or pure sourdough starter to create our pizza bases and focaccia. Sourdough starter is made from a unique microbiome of good bacteria and wild yeast harnessed from the environment. Before the advent of instant yeast this is how most bread was made. Sourdough was a happy accident thousands of years ago where leftover flour and water began the fermentation process. Sourdough helps us to connect to this ancient culinary practice and is something that we are proud to provide to diners at our restaurant.

Facts About Sourdough:

  • Easier to digest than traditional yeast based dough

  • Dates back to 4500 BC

  • Contains only wild yeast

  • Sourdough flavour is reflective of it’s environment; You could say we create Hervey Bay Sourdough

  • Sourdough is naturally lower in Gluten than yeast based dough due to the long fermentation process
